Led by James Beard Award-winning chef and pasta expert Sarah Grueneberg, Monteverde is dedicated to the craft of cooking authentic Italian fare using traditional techniques and the best ingredients possible. The entire operation centers around the custom-built pastificio, where the team hand-makes pasta throughout the day. The craft is so important to them that there's even a mirror behind the butcher's block so guests can get a better view of the pasta-making process.
Monteverde also features a balsamic batteria, where balsamic vinegar is aged in wooden barrels for the restaurant by a third-generation producer directly from Italy. The dining room feels homey and alive, with a buzz of activity that doesn't feel crowded or overwhelming. The restaurant opened in 2015 to plenty of accolades, with multiple publications naming it one of the best restaurants in Chicago, if not the entire United States.

Everyone I know has this place on their Chicago dining map. That being said - plan ahead. Reservations here can sometimes be booked up right away, but if you're willing to eat early, you have a much better chance of landing a table. Their lunch service on Tuesdays - Saturdays is much easier to grab a reservation for than their dinner service, which is usually booked solid for months.
